Harvest By hand in October

Vinification Traditional, fermentation in temperature-controlled stainless steel tanks equipped with an automatic pumping over system to allow greater extraction of colours and aromas. Ageing takes place in 25 and 50 Hl wooden barrels for about twelve/eighteen months.

Ronchi

Situated in the immediate vicinity of our winery, Ronchi is characterised by a unique terroir. The soils here are mostly calcareous-clayey, with a significant presence of bluish marl, giving the wine a particular earthiness and structure. The exposure is predominantly south-easterly, guaranteeing excellent sunshine throughout the day.

Cavanna

The Cavanna cru vineyard, next to our winery, is characterised by a terroir of remarkable finesse. The soils consist mainly of Sant’ Agata fossil marl, with a silty texture that conveys elegance and delicate aromas to the wine. West - south-westerly exposure allows the Nebbiolo grapes to benefit from excellent afternoon sunshine, favouring the development of fruity and floral aromas.
